We believe that the starting point for rejuvenation of the body, mind and spirit is through the foods or drinks that we consume.  We offer an abundance of fresh fruit, vegetables and whole foods at La Crisalida Retreats Spain, packed full of vitamins and minerals to bring health and vitality to your body. Following a plant-based (vegan) diet whilst at the retreat is an important part of the holistic La Crisalida Programme. We remove the products that cause extra stress on your body and create stunning tasty wholesome food to nurture you from the inside out.

Here at La Crisalida Retreats Spain, we prepare and serve tasty, fresh, wholesome nutritious food that is intended to support our bodies, without using any dairy or meat products, sugars or processed food. Our menus help to cleanse and re-balance your body whilst delivering maximum nutrition.

We use seasonal products, grown or sourced locally where possible, so lots of Mediterranean goodness. All food is served fresh, prepared and cooked daily on the premises, with care and loving attention from our talented team of chefs.

Our menus change in line with the seasons. During the warm Summer months, menus tend to be lighter and include more raw dishes. In the cooler Winter months, menus tend to have more hearty cooked dishes, including our fabulous soups, but fresh salads are always served. Within each season we have a two-weekly rotating menu, to ensure you have lots of variety and dishes to try.

Nutritious plant-based food in Spain

We like to offer you choice. So, everyday you can tell us if you would like to enjoy the plant-based meals or juice – for each meal. The menus are displayed in the dining room, together with the meal choice form. 

All meals are served so that you can help yourself to each dish. There is always plenty of plant-based food available for you to enjoy.

Breakfast

Breakfast is an important meal and gets your day off to a great start!

The La Crisalida standard breakfast in Spain includes homemade muesli, homemade granola (with gluten free options available) served with your choice of a variety of soya yoghurts and dairy-free milk (like rice milk or soya milk). A fresh fruit salad is also prepared daily using seasonal fruits. Optional extras for you to add to your breakfast bowl include goji berries, chia seeds, ground flaxseed and raisins. All breakfasts are accompanied by a small fresh juice.  Each day there is a special dish in addition to the standard breakfast for you to enjoy. During winter this includes porridges, banana bread and more. In summer we offer lighter fresher options, including chia seed bowls.

You may also choose to have a juice for breakfast, instead of eating. (All breakfast juices are made with avocado, unless requested otherwise). Read more about juicing at La Crisalida Spain here

Lunch

Think rainbow colours, lots of taste and a range of different textures and you have lunch here at La Crisalida!

We like to offer you variety for your lunch time meal. For example, one lunch menu might include all of the following: veggie bean burgers, guacamole dip, courgette toppers (like mini plant-based slices of pizza heaven), sweet potato and beetroot salad, raw cauliflower tabbouleh salad. There is always a big bowl of leafy salad, with vegetables, nuts or seeds, as well as a side dressing (we love our hazelnut dressing). You can sample all of the dishes on offer and you can refill your plate as many times as you want. Every lunch menu includes at least one protein-based dish and one carb-based dish. 

In the cooler months you can enjoy a delicious soup – we have more than 40 different soup recipes, including carrot and coriander, Mexican bean, “cream” of mushroom and Malaysian squash soup.

You are welcome to eat with fellow guests in the dining room, in any of the outdoor seating areas or take your plate to your own apartment or terrace area. Juicing is also an option.

Dinner

The evening meal is a sociable occasion, where we gather to enjoy food and company of fellow guests.

Meals are served in the main dining room, where we sit around our large tables to catch up with new friends about the days’ activities. During the warmer months we enjoy eating outside in our lovely outdoor dining area. 

As we do for lunch, variety of flavour, texture and taste is important for dinner. Some of the evening dishes that we serve include: red peppers stuffed with millet, vegan paella, Vietnamese rice noodles, carrot and lentil dhal, lentil “bolognaise”, mousakka and chickpea saffron and spinach stew. There are also side dishes available, for example, courgette and cucumber carpaccio, capresse salad (made with tofu), gado gado salad, a tasty dip, as well as a big bowl of leafy salad with a side salad dressing. In winter months you can also enjoy a bowl of soup.  

Twice each week (Tuesdays and Friday nights) we offer a dessert, like raw carrot cake, chocolate-orange “cheese cake”, or spiced pear crisp with banana “ice-cream”.

Friday nights and afternoon juice

Friday nights are a special night here at the retreat. We serve lovely alcohol-free cocktails, before sitting down to enjoy a delicious two course menu. We also offer occasional treats for special occasions, like birthdays – of the healthy variety of course!

In the afternoon we provide you with a small fresh juice to freshen up.

We encourage you to drink at least 3-5 litres of water per day whilst at the retreat as this helps with elimination of toxins and helps to keep the body well hydrated. Filtered water is available for you around the retreat. There is also a wide range of herbal teas, including green tea and hot water so you can make yourself a hot drink whenever you chose. Seasonal fruit is available throughout the day for you to choose.

Special diets – food allergies and intolerance

If you have any food allergies or intolerances do let us know when you book. As we prepare all the food on the premises, we can cater for guests with allergies and intolerances. We can also cater for coeliac and others special diets (gluten-free, nut-free etc).

Food items we do not serve

As part of the plant-based diet there are a number of foods that we have excluded from our menus. These foods all place extra stress on our body systems, so by cutting them out for one week, or a few days, the body has the opportunity to re-balance itself. The foods that we do not serve include: bread, dairy (milk, cheese, cream, yoghurt), eggs, caffeine (no coffee or black tea), alcohol, processed foods and refined sugar. We also do not use salt.
